I have used the Lemon oil in my water and also in the allergy shot, but had not cooked with it yet. I had used it to clean my fresh fruits, but not added it to any fruit dishes. This had to change. All I could think about was that wonderful lemon flavor with some delicious blueberries. So I decided to keep it simple and start with a classic blueberry muffin. A basic recipe, nothing fancy. I would just add the lemon oil and see how they turned out. Since I had never cooked with the oils, I wasn't sure how strong the flavor would be so it was all a guessing game for me. This time I only used two drops of the Lemon oil.

Lemon Blueberry Muffins
Preheat oven to 400 degrees and add liners to muffin pans. You can make mini muffins, just watch them and take out a little earlier than larger muffins.
3 Cups Flour
1 Cup Sugar
1 TBSP Baking Powder
3/4 tsp salt
1/2 stick melted butter
1 Cup milk
1 tsp vanilla
2-2 1/2 Cups of Fresh or frozen blueberries
2-4 Drops of doTerra Lemon Oil
Mix the flour, sugar, powder and salt in a large bowl.
make a small well and add 2 eggs, whisk them slightly, then add the melted butter, vanilla and milk. Stir until mixed. Add the blueberries and doTerra Lemon Oil and stir again.
Fill 3/4 full and bake for about 16-18 minutes. About 12-15 for mini muffins. Test with a toothpick to make sure they are done. Remove from muffin tins to cool and enjoy!!
